Cardamom: the flavour is a cross between lemon zest and eucalyptus. Is
available at Indian and Middle Eastern grocery stores.
This is a great low-fat snack!!!!
Pre-heat oven to 350 degrees. Spray 8 by 11 inch or 9 by 12 inch baking
dish with cooking spray. Combine all ingredients except butter and
chocolate in a food processor. Pulse to mix and pulverize oats. Add butter
and process until mixture is crumbly. Sprinkle evenly into pan. With the
back of a large spatula or with your fingers, press dough evenly and firmly
into pan. Bake until golden, 17-20 minutes. Cut into 1 1/4 inch squares
while hot. Cool in pan on rack. To garnish, drizzle melted chocolate over
cookies.
4 cookies per serving, makes ~4-1/2 dozen; per serving: 24 calories, 0.5g
protein, 0.8g fat, 4g carbo, 2mg chol, 13mg sodium, 0g fiber
