Caribbean Couscous

INGREDIENTS

1 (14 1/2-ounce) can chicken
Broth
1 (l 1/2-ounce) can mango or
Papaya nectar
2 c Uncooked couscous
1 Green onion, chopped
1/2 ts Ground allspice
1/2 ts Ground ginger
1/4 ts Crushed red pepper flakes
2 tb Lime juice
2 tb Olive oil
1 (15 1/4-ounce) can corn,
Drained
1 (15-ounce) can black beans,
Drained and
Rinsed
1 (4 1/2-ounce) can chopped
Green chilies
8 Cilantro sprigs

INSTRUCTIONS

In a large saucepan or Dutch oven, combine broth and nectar; bring to
a boil. Remove from heat, stir in all remaining ingredients except
cilantro. Cover, let stand 10 minutes. To serve, fluff with a fork.
Garnish each serving with a cilantro sprig. Makes 8 servings.
Per serving: Calories 320 Fat 4g No cholesterol Sodium 420 mg Percent
