1 lg Onion; coarsely chopped
1 lg Tomato; coarsely chopped
2 c Frozen okra; about
1 ts (heaping) "Caribbean" seasoning*

I've made this both with purchased "Caribbean" spice mix and with my own
spices, and love it every time.  And I'm sure you could use fresh okra, I
just keep frozen on hand. * "Caribbean" seasoning (contains dehydrated
ginger, brown mustard seeds, onion powder, allspice, garlic, paprika,
thyme, fennel, red and black pepper) - or use 1 teaspoon each grated ginger
and minced fresh garlic and about a quarter teaspoon of all the rest of the
spices
Simmer everything together, covered, with a little extra water if needed,
for half an hour.
