INGREDIENTS
1 | c | Raw apple cider or applejack |
1/4 | c | Lime juice |
3 | Cloves garlic, minced | |
1/2 | t | Coarsely ground black pepper |
1/2 | t | Ground papaya seed |
1 | 1-pound skirt steak |
INSTRUCTIONS
For marinade, combine all ingredients. Sprinkle papaya seed over steak; Marinate for at least 4 hours, turning several times. barbecue over mesquite coals or broil to desired doneness. Slice steak against the grain. Serves 2 to 4. Variation: Beer may be substituted for the applejack.
