Carrot And Peanut Raita

INGREDIENTS

2 Carrots; (200 g.)
50 g Roasted salted peanuts; (groundnuts)
1 sm Flake; (1 g.) garlic,
; coarsely chopped
1 Green chilli; deseeded and
; coarsely chopped
1/4 ts Salt or to taste; (1 g.)
1 125 gram thi curd
1/2 ts Sugar; (2 g.)
15 g Coriander leaves; chopped fine
; (optional)

INSTRUCTIONS

PEEL and grate the carrots coarsely. Crush peanuts with a wooden
pestle or rolling pin. Mix garlic, green chilli and salt and crush to
a pulp. Beat the curd until smooth and stir in the garlic mixture.
Add the carrots, peanuts, sugar and coriander leaves (if using) and
mix thoroughly.
This raita complements almost any meal and can be served as a relish
with kababs or pakoras.
