Carrot Cake Sans Oeufs

INGREDIENTS

3/4 c Sugar
1 c Grated carrot
1 c Raisins
1 ts Cinnamon
1 ts Grated nutmeg
1 ts Ground cloves
1 1/2 c Water
3 tb Margarine
2 c Flour
2 ts Baking soda
1/4 ts Salt
1 c Chopped walnuts

INSTRUCTIONS

Preheat oven to 325 F. Grease a 13 x 9-inch baking pan with
margarine. In a small saucepan, combine sugar, carrot, raisins,
cinnamon, nutmeg, cloves, water and margarine. Bring to a boil.
Reduce heat and simmer for 5 minutes. Pour into a mixing bowl and
cool to lukewarm. Add flour, baking soda, and salt. Mix well. Stir in
walnuts. Pour into pan and bake for 1 hour or until a cake tester
comes out clean.
