INSTRUCTIONS
Grate the celery root and place in a medium-size bowl. Add red onion
and toss to mix. Set aside.
Place garlic, mustard, vinegar, and lemon juice in the bowl of a food
processor. With the motor running, slowly add the olive oil. Once the
oil is incorporated, add the celery seed and parsley. Season with
salt and pepper.
Add the dressing to the celery root mixture, and toss to mix. Chill
for about
30 minutes before serving.
