INSTRUCTIONS
In saucepan gently warm Champagne, orange juice, sugar and honey,
stirring. Meanwhile, in small saucepan, sprinkle gelatin over cold
water; let stand for 5 minutes. Warm over medium-low heat until just
melted; whisk in orange juice mixture. Simmer for 1 minute. Do not
allow to boil.
Divide about 1/2 cup among eight 1 cup martini or widemouth glasses.
Refrigerate for about 2 hours or until set. Pour remaining mixture
into large bowl; let stand at room temperature for 1 hour or until
consistency of egg whites.
Meanwhile, cut away rind and pith from oranges; cut between membrane
and pulp to release sections. Place in bowl. Reserve 8 strawberries
for garnish; quarter remaining berries and add to oranges. Spoon over
gelatin in glasses.
With hand mixer, whip remaining orange juice mixture until frothy and
pale; divide among glasses. Refrigerate for about 1 hour or until set
or for up to 24 hours. Top each with reserved strawberry and mint
sprig. Makes 8 servings. Variation: Orange Juice Parfait: Substitute
gingerale for Champagne; omit honey. Typed in MMFormat by
