Chanukah Blueberry Latkes

INGREDIENTS

2 c Flour
1/2 ts Salt
3 ts Baking powder
1 tb Sugar
1 1/2 tb Matzo meal
3 Eggs, well beaten
1 1/2 c Milk (about)
4 tb Melted butter
2 c Blueberries (fresh, frozen or canned)
Sugar
Maple sugar or maple syrup
Butter

INSTRUCTIONS

Sift together the first 3 dry ingredients; then add the sugar and the matzo
meal.  Add the milk to the eggs and stir in the flour.  Stir in the melted
butter.  Beat until smooth.  Use a large frying pan or griddle; grease
surface in required by your pan, bake large latkes the size of the pan,
browning nicely on both sides.
To serve, heat the fruit gently, sweetening to taste.  Spread the latkes
with the butter, put together in threes, with blueberries between the
layers, and with maple sugar or with maple syrup over the top.  Cut into
wedges to serve.  Serves 3 or 4.  This makes an interesting dessert or
party sweet with coffee.
Variation:  Any other desired fruit may be substituted.
