INGREDIENTS

1 c Self raising flour
Good pinch salt
125 g Butter
1 c Grated tasty mature cheddar cheese
Toasted sesame seeds or desiccated
; coconut

INSTRUCTIONS

Preheat oven to moderate (180 deg C). Lightly grease 2 baking trays
and line with baking paper. Sift flour and salt. Rub in butter and
cheese. Knead mixture together lightly. During hot weather it may be
necessary to chill the dough for 1/2 hour for easy handling.
Roll into small balls with floured hands and toss in sesame seeds or
coconut. Place onto baking trays allowing a little room between, press
lightly with a fork.
If you own a Swedish biscuit press, add an extra one or two
tablespoons flour so the mixture is the right consistency. Adjust the
triangle and notches for thin biscuits. Form dough into a roll with
floured hands and fill the barrel. Adjust disc for thin biscuits then
press mixture out into shapes on the greased tray. Sprinkle with
sesame seeds or coconut. Bake in a moderate oven for about 20 minutes.
