INGREDIENTS

2 cn Enchilada sauce; (10oz)
1 ct Cottage cheese; (18 oz)
1 ct Sour cream; (8 oz)
1 sm Can chopped green chiles
1/4 ts Salt
8 Flour tortillas; (8")
1 c Monterey jack cheese
1 c Cheddar cheese
Cilantro sprigs
Ripe olives

INSTRUCTIONS

Spread 3/4 cup enchilada sauce in lightly greased 9 x 13 inch baking
dish. Combine cottage cheese, sour cream, green chiles and salt.
Spoon about 1/3 cup of mixture down center of each tortilla. Sprinkle
evenly with Monterey Jack cheese. Roll up tortillas and place, seam
side down in baking dish. Top with remaining enchilada sauce. Cover
and bake at 350 degrees for 25 minutes. Uncover and sprinkle with
Cheddar cheese. To serve, garnish with more sour cream, cilantro and
ripe olives. Yield: 4 servings.
