Cheese, Onion And Herb Flan

INGREDIENTS

6 oz Plain flour
4 oz Block margarine; melted
1 tb Water
1 oz Margarine
1 lg Onion; finely chopped
2 tb Freshly chopped mixed herbs
6 oz Vegetarian Cheshire cheese; grated
2 Medium-sized eggs
4 tb Single cream or milk
Salt and freshly ground black pepper

INSTRUCTIONS

FOR THE PASTRY
FOR THE FILLING
1. Mix together the flour, melted margarine and water and press into
the base and up the sides of a 23cm (9inch) fluted flan ring. Chill
for 20 minutes.
2. Prick the base with a fork and bake blind in a preheated oven 200
°C, 400 °F, Gas Mark 6 for 20 minutes.
3. Melt the margarine and fry the onion for 4-5 minutes. Cool
slightly, stir in the herbs then spoon into the flan case.
4. Mix together the cheese, eggs, cream or milk and seasoning and
pour over the onion.
5. Place on a baking tray in a preheated oven 190 °C, 375 °F, Gas
Mark 5 for 25-30 minutes until the filling has set and turned golden.

NOTES : Deliciously light flan ideal for a main course, or served as
individual flans for a starter, it would serve 6. Serve hot or cold.
