Cheesy Potatoes

INGREDIENTS

2 1/2 lb Boiling potatoes; peeled and cut into 1 inch cubes
1/2 lb Cream cheese
1/2 lb Sour cream
2 Eggs
3/4 c Grated Parmesan cheese
1/8 ts Hot red pepper sauce
2 c Shredded cheddar cheese

INSTRUCTIONS

Prep: 10 min, Cook: 45 min.
Place potatoes in a steamer basket over boiling water. Cover pan and steam
12-15 minutes or until tender. Drain. Preheat oven to 350°F. Combine next 5
ingredients and salt and pepper to taste in a food processor. Process until
smooth. Add cooked potatoes and process until just combined. Add half the
cheese and mix thoroughly. Transfer to a buttered baking dish and bake 20
minutes. Sprinkle remaining cheese over top and bake another 10 minutes
until cheese is melted
