4 sm Leeks; cleaned and trimmed
6 Wooden skewers; (soaked in water for

2 tb Olive oil
1 md Red onion; chopped
1 Clove garlic; chopped
1 ts Grated orange rind
2 md Tomatoes; skinned, seeded and
; chopped
1 cn Plum tomatoes
1 tb Harissa
1 sm Bunc flat leaf parsley
2 ts Dry coriander
1 1/2 ts Chilli powder
1 ts Cinnamon
1 ts Thyme
1/2 ts Black peppercorns
2 tb Olive oil
2 fl Lemon juice

INSTRUCTIONS

VEGETABLES FOR KEBABS
TOMATO SAUCE MIX
SPICE MIX FOR KEBABS
Blend all the ingredients for the kebab spice mix in a food mixer and
set aside.
To make the tomato sauce add 11/2 tablespoons of olive oil to a pan ,
with the onion and garlic and the chopped fresh tomatoes. Let it cook
down for a while. When adding the tin of plum tomatoes, squeeze each
tomato in your hands before adding to the pan. Add the harissa and
simmer the sauce for about 20 minutes.
While the chermoula mix is cooking, baste the vegetable kebabs with
the blended spice mix and grill.
Serve immediately with the hot tomato sauce.
