INGREDIENTS
| 2 1/4 | c | Flour |
| 1 1/3 | c | Sugar |
| 3 | ts | Baking powder |
| 1 | ts | Salt |
| 1/2 | c | Vegetable shortening |
| 1/4 | c | Maraschino cherry juice |
| 16 | Maraschino cherries | |
| 1/2 | c | Milk |
| 4 | lg | Egg whites |
| 1/2 | c | Chopped walnuts |
INSTRUCTIONS
Preheat oven to 350°F. Sift together the flour, sugar, baking powder, and salt. Add the vegetable shortening, cherry juice, cherries and the milk and beat for 2 minutes. Add 1/2-2/3 cups(4 large) unbeaten egg whites and beat 2 minutes more. Then fold in1/2 c. of chopped nuts. Pour into two greased and floured round cake layer pans and bake for 30-35 minutes. Frost with pink Seven Minute Frosting (it's recipe is in this file). NOTES : MUST use 7-Minute Frosting on this cake and color it pink.
