INGREDIENTS

1 15 1/2 oz chestnuts
1/2 c Unsweetened cocoa powder
1/2 c Confectioner's sugar
2 T Dark rum, up to 3
1/4 c Unwhipped heavy cream
3/4 c Heavy cream, whipped

INSTRUCTIONS

Drain chestnuts and rinse under cold water; dry. Place them with cocoa
powder, sugar, rum and 1/4 cup unwhipped heavy cream in processor.
Puree, scrape down sides and process until chestnuts are pureed. Whip
cream, fold into puree and chill until dinner time.  Yield: 4 servings
