INSTRUCTIONS
Preheat oven to moderate (350~F). Chop fruit coarsely. Pour boiling water
over fruits in a small saucepan; simmer 5 minutes; drain and cool.
Beat eggs in large bowl with electric mixer until frothy. Add sugar and
cinnamon; beat until smooth. Stir in fruits, granola and cashews. Pour into
a greased 13x9x2-inch baking pan, spreading mixture evenly.
Bake in preheated moderate oven (340~F for 35 minutes. Cool on wire rack.
Cut into bars. Makes 24 bar cookies.
