Chicken And Cortland Apple Couscous

INGREDIENTS

4 Boned and skinned chicken
breast halves cook &
chopped
2 c Couscous, dry
2 3/4 c Fat-free chicken broth
boiling
1/2 c Golden raisins
1/2 c Slivered almonds, toasted
2 Apples, peeled and chopped
1/2 t Coriander
1/4 t Ground cinnamon
1/8 t Ground cloves

INSTRUCTIONS

Preheat oven to 400F. Combine all ingredients in a 9x13x2 inch glass
baking pan. Cover with foil and bake for 25 minutes.  The original
recipe called for 2 1/2 c stock and 1/4 c unsalted  butter. I have
adapted it to reduce the fat.  Per serving: 329 Calories; 6g Fat (16%
calories from fat); 22g  Protein; 50g Carbohydrate; 26mg Cholesterol;
