This is another method of using one chicken to feed several people. The
dumplings are a wonderfully frugal way to enjoy a full meal.
Prepare the chicken according to Nettie Smith's Chicken and Noodles
recipe (see recipe), omitting the noodles. Instead, cut down on the liquid
in the final pot and drop dumplings (see recipe) on top. Cook according to
the dumpling recipe.
I love a dish of Collard Greens on the side and some of Harriet's
Southern Biscuits (see recipes).
