INGREDIENTS

5 lb Stewing hen, cut up
1/2 c Shortening
1 c Chopped onion
1/2 c Chopped fresh parsley
1/2 t Pepper
2 lb Uncooked shrimp
1/2 c Chopped green onion
3 1/2 t Salt
1/2 c Flour
2 T Worcestershire sauce
1 T Lemon juice
1/2 t Thyme
1/2 c Chopped celery
1 t File powder

INSTRUCTIONS

Sprinkle chicken with 1.5 tsp of salt.  Melt shortening in a large
heavy pot.  Add chicken pieces; brown, turning on all sides, for  about
15 minutes Remove chicken. Stir flour into hot fat in wich  chicken was
browned. Stir constantly, keeping heat low, until flour  is dark brown.
