INGREDIENTS

4 lg Boned chicken breast
8 sl Prosciutto; or cooked ham
8 sl Swiss cheese; Gruyer, Jack or cream cheese
Thyme; optional
1 Egg; beaten
Bread crumbs
3 tb Butter; for frying

INSTRUCTIONS

Prepare chicken breasts by cutting lengthwise, making a total of eight
pieces. Place between plastic wrap and pound with a mallet until each
portion is no more than 1/8 inch thick. Place one slice of prosciutto and a
slice of cheese on the chicken. Sprinkle a little thyme if you like. Roll
chicken to enclse filling. Coat with flour and dip in one beated egg. Then
roll in dry bread crumbs. In a large fry pan melt 3 tablesppons butter and
add chicken rolls. cook 15 minutes. Turn frequently to brown all sides.
Transfer to warm serving dish.
6-8 servings.
