INGREDIENTS

1 tb Oil
500 g Skinless chicken breast fillets; (1lb)
1 Onion; chopped
1 Clove garlic; crushed
Salt and freshly ground black pepper
2 tb Mild curry paste; up to 3
375 g Natural yogurt; (12oz)
1 tb Freshly chopped coriander; up to 2
75 g Sultanas; (3oz)

INSTRUCTIONS

1. Heat the oil in a saucepan, add the chicken, onion and garlic and
fry for 10-15 minutes, stirring occasionally, until golden. Season to
taste.
2. Mix together the curry paste, yogurt, coriander and sultanas.
3. Stir the yogurt mixture into the chicken and heat gently for 1-2
minutes. Serve with long grain and wild rice.
