Chicken in Orange Sauce

Whole chicken breasts; (up to 6)

Onion; (even a Maui onion will do)(sorry Mary-couldn't resist)

Frozen orange juice concentrate

Brown sugar

Parsley -fresh

Soy sauce; (low salt)

ts
Ginger
1/3

Water

ts
Sherry
INSTRUCTIONS
Slice onion thin and saute or microwave till soft. Set aside. Cook chicken
however you prefer. Bake, broil, micro. - I prefer grilled, but will micro
in a pinch. Simmer remaining ingredients till thick. Arrange chicken on a
platter, top with onions and pour sauce over all. Seems very simple, I
know, but the flavor is wonderful. Fixed this alot for my dad after his
heart attack. (The sauce can be made and kept in jar in refrig to use as
needed.)
