INGREDIENTS

1/2 c Cornmeal
1 T Chili powder
1 t Ground cumin
1 t Salt
4 Boneless, skinless chicken
breasts cut in 1-inch
cubes
2 T Vegetable oil, up to 4

INSTRUCTIONS

In a large mixing bowl, combine cornmeal, chili powder, cumin, and
salt. Add chicken and coat thoroughly.  2. In a large skillet, heat
oil. Add chicken and cook 7 to 9 minutes,  turning once, until crisp.
Drain on paper towels.  Makes 20 to 30 pieces.  Family Circle had some
