Chicken Masala with Stir Fried Vegetable Medley

INGREDIENTS

500 g Boneless chicken breasts; skin removed
2 ts Oil
1 Onion; diced
1 pk MAGGI Chicken Masala Mix
3/4 c Cream
1 tb Oil; (1 to 2)
3 c Sliced mixed vegetables; e.g. broccoli, (3
To 4)
; courgettes,
; pumpkin, carrots,
; celery, runner or
; French beans,
; onion.
1 ts MAGGI Mushroom Stock Powder; (1 to 2)
1 tb Water or MAGGI Oyster Sauce; (1 to 2)
1/2 ts Grated fresh root ginger

INSTRUCTIONS

CHICKEN MASALA
STIR FRIED VEGETABLE MEDLEY
Cut each chicken breast lengthways into 4 strips.
Heat the oil in a frying pan. Add the chicken and brown over a
moderately high heat. Remove the chicken and set aside.
Add the onion to the pan and cook for 2 minutes
Combine the Chicken Masala Mix and cream. Add to the pan and bring to
the boil, stirring constantly.
Return the chicken to the pan. Cover and simmer over a low heat for
6-8 minutes or until the chicken is cooked. Stir occasionally.
Serve with Stir Fried Vegetable Medley and Rice
Stir Fried Vegetable Medley:
Heat the oil in a large saucepan or wok. Add the vegetables. Put
those that take the longest to cook in first. Stir fry for 3-4
minutes.
Sprinkle the stock powder over the vegetables
Add the water or oyster sauce and ginger. Stir thoroughly. Cover the
pan
Cook for a further 2-3 minutes or until the vegetables are just
tender.
