Chicken ‘n’ Broccoli-Topped Orzo

INGREDIENTS

2 ts Olive oil;
1 Garlic clove; minced
1/2 lb Chicken breast; cut in cubes
1 c Broccoli flowerets; blanched
1 c Chicken broth;
1/4 ts Salt;
1/8 ts Pepper;
1 1/2 oz Orzo; uncooked
1 tb Parmesan cheese; grated

INSTRUCTIONS

Cook pasta according to package directions.
In a 10-inch skillet or wok heat oil over high heat; add garlic and
Sauté for 1 minute. Add chicken and cook, stirring quickly and
frequently, until chicken is no longer pink, about 5 minutes. Add
broccoli, broth, salt, and pepper and let cook until chicken is
tender and mixture is heated through, 3 to 5 minutes. Serve over hot
orzo and sprinkle with Parmesan cheese.
