Chicken Parmigian

INGREDIENTS

4 Chicken breasts; boned and skinned
2 Eggs
3 tb Water or milk
3/4 c Fresh breadcrumbs
1/4 c Grated Parmesan cheese
Flour
Oregano
Rosemary
8 sl Smoked ham; ( optional)
Good homemade tomato sauce
8 sl Or more Mozzarela cheese
Oil and olive oil; ( 1 part each, for frying)
Salt and pepper to taste
1 tb Grated onion
1 Clove garlic; ( crushed)

INSTRUCTIONS

1. Slightly beat together eggs, water, salt and pepper, onion and garlic
2. Let chicken soak in egg/water mixture for 1 hour.
3. Mix crumbs with herbs and grated parmigian
4. Remove breasts from eggs and roll them in the flour, then dip them in
the eggs again and roll in the breadcrumbs, shakng off excess crumbs.
5. Fry chickn in the mixture oil/olive oil and drain them in paper towels.
6. Arrange breasts in a baking dish side by side
7.Top each with a slice of ham and a slice of mozzarela
8 Cover with the tomato sauce ( to taste)
9. Bake at 375 until cheese melts
