Chicken Satay

INGREDIENTS

2 lb Chicken; skinned, boned, cubed
1 tb Ground coriander
1/2 ts Pepper
3 tb Lemon juice; up to 4
5 tb Soy sauce
6 tb Peanut butter
6 tb Salad oil
2 oz Brown sugar
2 Garlic cloves; peeled
1 pn Cayenne pepper

INSTRUCTIONS

MARINADE
Blend marinade ingredients together. Pour over chicken and let sit
for 2 hours. Put pieces of meat on skewers and grill 3 minutes on
each side.
An unusual marinade that everyone loves. Also makes a great hors
d'oeuvre. Great for cookouts with a pasta salad.
If using wood skewers, soak skewers in water while chicken is
marinating. This will prevent them from burning when on the grill.
