Chicken Satay with Cucumber Relish

INGREDIENTS

1 lb Boneless skinless chicken breast halves
1 ts Minced garlic
1/2 c Lime juice
1 tb Honey
1 tb Grated fresh ginger
1 tb Grated lime rind
1 c Peeled; seeded cucumber, finely diced
1 ts Minced garlic
2 tb Minced cilantro
1/2 c Seeded tomatoes; finely diced
1 sm Jalapeno chile; seeded and minced
2 tb Rice vinegar

INSTRUCTIONS

CUCUMBER RELISH

1. Cut chicken into 1-inch pieces and place in a large, shallow pan. In a
small  bowl mix together garlic, lime juice, honey, ginger, and rind.  Pour
over chicken  and let marinate for 30 minutes, tossing frequently.
2. Preheat broiler or grill. Assemble chicken on short skewers. Broil or
grill until browned (5 minutes). Serve immediately with Cucumber Relish.
Cucumber Relish: Combine all ingredients in a bowl. Let marinate 15 minutes
before serving. Makes about 2 cups.
