Chicken Satay with Peanut Sauce

INGREDIENTS

250 g Skinless chicken breasts or 285g; (9oz) pack tofu,
; preferably smoked
; (8oz)
6 sm Bamboo satay or small metal skewers
3 Lettuce leaves; (3 to 4)
4 Spring onions
2 Cm; (1 inch) piece of
; fresh root ginger
1 Clove garlic
1 ts Ground coriander
1 ts Ground cumin
2 tb Light soy sauce
1 tb Sunflower oil
1 tb Lemo juice
1 ts Sugar
2 tb Peanut butter
6 tb Water
2 ts Soy sauce
1 ts Lemon juice
1 ts Sugar

INSTRUCTIONS

FOR THE SATAY
MARINADE
PEANUT SAUCE
On a chopping board, cut the chicken breasts or tofu into bite size
cubes, about 2 cm square.
Trim the onions and cut into small pieces. Peel the ginger and grate
on the small holes of the grater. Crush in the garlic.
Add the rest of the marinade ingredients and mix in the chicken or
tofu. Cover and leave in the fridge for 1 hour.
Meanwhile, make the sauce. Put the peanut butter, water, soy sauce,
sugar, and lemon juice into a small saucepan.
Bring to the boil, stirring until smooth. Simmer for 2 minutes and
pour into a small serving bowl to cool.
Roll the lettuce all together and cut into shreds with a sharp knife.
Put it on to a serving plate and leave to one side.
Drain the wooden satay sticks if you are using them and thread about 6
pieces of chicken or tofu onto each one.
Preheat a grill until hot, put the satays under, then turn down to a
moderate heat. Cook for 5 minutes on each side.
Carefully place the satays on the plate lined with shredded lettuce
and serve with the sauce.

NOTES : A delicious party snack or main meal. Vegetarians can use
cubes of tofu instead of chicken. If possible, use wooden satay
sticks but remember to soak them in cold water before you start to
prevent them burning.
