INGREDIENTS

Orange rind
Chilli
1 tb Szechwan peppercorns
6 Chicken wings; (6 to 8)
3 tb Minced garlic
3 tb Minced fresh ginger
3 tb Finely grated orange zest
4 Spring onions cut into small pieces
1 Fresh chili; finely chopped
2 tb Liquid honey
2 tb Soy sauce
450 ml Corn oil; (16fl oz)
125 ml Sesame oil; (4 1/2fl oz)
Salt and pepper

INSTRUCTIONS

Place the peppercorns, garlic, ginger, orange zest and chilli into
the food processor, until it makes a paste.
In a large bowl place the honey, soy sauce and oils with the paste.
Season to taste. Add the chicken wings, turn to coat, then allow to
marinate for at least 4 hours or preferably overnight.
Cook the chicken wings in a hot griddle pan or in a hot BBQ for 7-8
minutes each side or until thoroughly cooked and golden brown.
Garnish the chicken with a mixture of orange zest and chives.
