Chicken with Lemon And Sage

INGREDIENTS

25 g Butter; (1oz)
4 Skinless chicken breast fillets
1 Clove garlic; crushed
4 Spring onions; diagonally sliced
3 tb Freshly chopped sage
Grated rind and juice of 1/2-1 lemon
1 200 gram car cr.me frâiche; (7 fl oz)
2 ts Cornflour; blended with
1 tb Cold water
Salt and freshly ground black pepper

INSTRUCTIONS

1. Heat the butter in a frying pan and cook the chicken and garlic for
12-15 minutes, stirring occasionally.
2. Add the onions, most of the sage, lemon rind and juice, cr.me
frâiche, blended cornflour and seasoning. Cook for a further 4-5
minutes, stirring occasionally.
3. Transfer to a warmed serving dish, sprinkle with the remaining
sage and serve with long grain and wild rice.
