INGREDIENTS
| 1/3 | c | Soy sauce |
| 2 | tb | Lime juice |
| 2 | tb | Water |
| 1 1/2 | tb | Cornstarch |
| 1 | lb | Boneless chicken breast or thigh meat,cut into bite-size pieces |
| 8 | oz | Fresh mushrooms,cleaned and sliced |
| 1/2 | lb | Fresh snow peas |
| 3 | c | Cooked rice |
INSTRUCTIONS
Combine soy sauce, lime juice, water and cornstarch in a 2 qt. round casserole. Stir chicken and mushrooms into soy sauce mixture. Cover and stirring midway through cooking, microwave on high 7 to 8 minutes. Add snow peas, cover and microwave on high 2 minutes or until snow peas are tender crisp.
