Chicken With Sweet Potatoes And Prunes

INGREDIENTS

16 Dried prunes
1/4 c Vinegar
1/4 c Orange juice
1 c Chicken broth
4 T Firmly packed brown sugar
1/2 t Salt or to taste
4 Sweet potatoes, peeled and
cubed
4 Boneless and skinless
chicken breast
halves
1/2 c Dry vermouth
2 Cloves garlic, minced
1 T Oregano

INSTRUCTIONS

In a large stock pot combine the prunes, vinegar, orange
juice,broth,vermouth, garlic, oregano, sugar, and salt. Bring the
mixture to a boil.  Add the sweet potatoes and cook for about 15
minutes.  Place the chicken breasts on top of the potatoes, cover, and
cook for  about 20 minutes or until the potatoes are done.  Skim the
fat from the broth. If desired, dissolve the cornstarch in  the water
and add it to the broth. Cook, stirring constantly, until  thick and
