Chickpea and Sweet Potato Koftas

INGREDIENTS

1 Medium-sized sweet potato
2 c Cooked chickpeas; (1 15oz can)
2 Scallions; cut in 1 inch pieces
1 ts Cumin
1 ts Ginger
1 ts Salt
2 tb Lemon juice
Black pepper; to taste
6 tb Flour
1 c Peas; (fresh or frozen)
Oil for frying

INSTRUCTIONS

Peel and cube the sweet potato and steam, boil or microwave it. Put all the
ingredients except the flour and peas into a food processor and puree. Mix
in the flour and add the peas. Form patties and fry on both sides till
golden brown.
They really look very pretty when done - all orange with green peeking out!
