Chickpea And Sweet Potato Koftas

INGREDIENTS

1 Medium-sized sweet potato
2 c Cooked chickpeas, 1 15oz
can
2 Scallions, cut in 1 inch
pieces
1 t Cumin
1 t Ginger
1 t Salt
2 T Lemon juice
Black pepper, to taste
6 T Flour
1 c Peas, fresh or frozen
Oil for frying

INSTRUCTIONS

Source: Vegetable Heaven by Mollie Katzen  Peel and cube the sweet
potato and steam, boil or microwave it. Put  all the ingredients except
the flour and peas into a food processor  and puree. Mix in the flour
and add the peas. Form patties and fry on  both sides till golden
brown.  They really look very pretty when done - all orange with green
