INSTRUCTIONS
GARNISH
Peel cucumber and cut into 4 pieces. Quarter avocado, removing pit,
and peel. Cut scallion into large pieces. In a blender puree all
ingredients until smooth and season with salt and pepper.
Serve soup garnished with coriander.
