INGREDIENTS

2 c Cucumbers; peeled and coarsely chopped
1 c Chicken broth
1/4 c Celery leaves; chopped
1/4 c Chives; chopped
3 Sprigs parsley; fresh
1 tb Basil; fresh -OR-
1/4 ts Dried basil
3 tb Butter; softened
3/4 c Sour cream
Salt to taste
1 Pinch white pepper
2/3 c Cucumber; finely chopped for garnish
Grated lemon rind for garnish

INSTRUCTIONS

Combine all ingredients in a blender and blend until smooth. Taste and
adjust seasonings if desired.
Serve chilled and garnish with finely chopped cucumber and a bit of grated
lemon
rind.
