INGREDIENTS

1 tb Groundnut oil
1/2 Onion; thinly sliced
2 Green chillies; de-seeded and
; thinly sliced
1 Green pepper; de-seeded and
; sliced
1 lg Tomato; grilled, peeled,
; de-seeded and
; mashed
3 fl Milk
4 oz Vegetarian Cheddar cheese; grated
2 oz Mozzarella cheese

INSTRUCTIONS

1. Heat the oil in a heavy-based saucepan and fry the onion, chillies
and pepper for 4 minutes.
2. Add the mashed tomato and fry for a further 4 minutes.
3. Add the milk and cheese and simmer gently until the cheese is
melted. Do not allow the cheese to bubble.
4. Serve immediately.
