Chocolate Almond Truffles

INGREDIENTS

1 pk Semisweet; (6-ounce)
Chocolate morsels
3 tb Butter or margarine
3 tb Powdered sugar
2 Egg yolks
24 Whole toasted almonds
1/2 c Finely chopped almonds

INSTRUCTIONS

Place chocolate morsels in top of a double boiler; bring water to a
boil. Reduce heat to low; cook until chocolate melts. Add butter and
powdered sugar, stirring until sugar dissolves. Remove from heat.
Add egg yolks, one at a time, beating with an electric mixer after
each addition. Pour mixture into a bowl; cover and let sit 12 hours
in a cool, dry place (do not refrigerate).
Shape mixture into 1-inch balls; insert 1 whole almond in center of
each ball. Roll lightly in chopped almonds. Yield: 2 dozen.
MICROWAVE DIRECTIONS: Place chocolate morsels in a 1-quart glass bowl.
Microwave at MEDIUM (50% power) for 2 to 3 minutes or until chocolate
is softened; stir well. Add butter and powdered sugar, stirring until
powdered sugar dissolves.
Add egg yolks, one at a time, beating with an electric mixer after
each addition. Pour mixture into a bowl; cover and let sit 12 hours
in a cool, dry place (do not refrigerate).
Shape mixture into 1-inch balls; insert 1 whole almond in center of
each ball. Roll lightly in chopped almonds.
