Chocolate Baked Beans With Mole

INGREDIENTS

3/4 c Thinly-sliced onion
1 T Chopped garlic
1 T Olive oil
4 c Cooked Tocarnares chocolate
beans
1 Red bell pepper, roasted and
chopped
1 c Mole Sauce, see * Note
Steamed aromatic rice

Chopped cilantro
Chopped sweet red onions

INSTRUCTIONS

Note: See the "Mole Sauce" recipe which is included in this
collection.  Saute the onion and garlic in olive oil until soft and
lightly  colored. Combine with beans, red pepper, and Mole Sauce and
pour into  a lightly-oiled baking dish and bake covered in a preheated
350  degree oven for 35 to 40 minutes. Serve with steamed aromatic rice
and lots of freshly chopped cilantro and sweet red onions. This  recipe
