INSTRUCTIONS
Add vanilla essence to caster sugar to give vanilla sugar. Melt the
chocolate block in a bowl over a pan of boiling water. The bottom of
the bowl must not touch the water or the chocolate will congeal.
Mix the baking powder, some salt and flour together in a bowl. Blend
the sugar and butter in a blender.
Put 3 egg yolks in a bowl and whisk well with a fork then add to the
melted chocolate. Mix in the sugar and butter mixture then beat
everything together with a whisk.
Add in the flour mix while whisking then the sultanas and a little of
the liquid from marinating. Add the nuts and the white chocolate
pieces.
Spoon the mixture into a buttered baking tray then smooth to a flat
surface. Place in a warm oven to cook for 20 minutes. The end result
should look crisp and be soft in the middle.
