INGREDIENTS

3 Egg
1 c Oil
1 ts Vanilla
3 c Flour
1 ts Baking powder
1 1/2 ts Cinnamon
1/2 c Coconut
1/4 c Chocolate chips
1/4 c Raisins
1/4 c Hazelnuts or almonds or walnuts; coarsely chopped

INSTRUCTIONS

Beat eggs and sugar well, add vanilla then dry ingredients.
Refrigerate several hours or overnight.
Form into logs 1-2 inches in diameter. Wet hands help keep dough from
sticking to hands. Bake at 350 degrees for 35-40 minutes. Remove from oven,
allow to cool for 10 minutes then slice cookies 1/2 inch thick. Toast at
300    degrees until very dry.
Per serving: 129 Calories; 8g Fat (58% calories from fat); 2g Protein; 12g
Carbohydrate; 18mg Cholesterol; 18mg Sodium
