Chocolate Chip – Oatmeal Cookies

INGREDIENTS

6 tb Margarine; softened
1/2 c Unsweetened applesauce; or prune puree
1 3/4 c Packed light brown sugar
1 Egg
1 ts Vanilla
2 c Quick-cooking oats
1 3/4 c All-purpose flour
1 ts Baking soda
1/2 ts Salt
3/4 ts Ground cinnamon
1 1/2 c Semisweet chocolate chips

INSTRUCTIONS

Bean margarine and applesauce in large bowl until smooth; beat in
brown sugar, egg, and vanilla. Mix in combined oats, flour, baking
soda, salt, and cinnamon. Mix in chocolate chips.
Drop dough by rounded tsp fulls, 3 inches apart, onto greased nonstick
cookie sheets. Bake at 350 until lightly browned, about 10 minutes
(cookies will spread and become very soft). Cool completely on wire
racks before removing from pan.
Per cookie = 80 calories, 2 gm fat, 3 mg cholesterol, 56 mg sodium,
13 gm carbohydrate, 0 gm fiber, 1 gm protein
