Chocolate Cocoa Cake

INGREDIENTS

Oil for greasing pan
1 1/4 c Cake flour
1/2 c Unsweetened cocoa
1 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
1 1/4 c Sugar
2/3 c Water
1 1/2 Egg whites
1/2 c Baby-food prunes (with
Tapioca works fine)

INSTRUCTIONS

Preheat oven to 350 degrees F. Lightly grease a 9-inch square baking
pan with oil. Combine flour, cocoa, baking powder, baking soda and
salt. In another bowl, stir sugar and water with fork or wire whisk
until blended. Stir egg whites and prunes into sugar mixture until
thoroughly blended. Gradually add flour mixture, stirring until
smooth. Pour into prepared pan. Bake about 30 to 35 minutes, until
knife inserted in center comes out clean. Cool in pan on wire rack.
