Jonathan Edwards was one of the greatest theologians. It is also said he had one of the sharpest minds America ever produced. He was dedicated to being the best he could be for God (hence his “Resolutions”) and even back in the mid 1700’s he exercised primarily for the purpose to stay mentally sharp.

Chocolate Cupcakes with Cream Cheese and Chocolate Chip Fill

INGREDIENTS

3 c Flour
2 c Sugar
1/2 c Cocoa
2/3 c Oil ( I have substituted 1/3c. oil and 1/3c. applesauce)
2 ts Soda
2 c Water
2 ts White vinegar
2 ts Vanilla
1 pk (8 oz) cream cheese
1 Egg
1/3 c Sugar
1/2 ts Salt
1 pk (6 oz) semi-sweet choc. chips

INSTRUCTIONS

CHOCOLATE MIXTURE
FILLING
Mix chocolate mixture ingredients well. Beat filling ingredients. Fill
paper cups 1/2 full with chocolate mixture. Drop heaping teaspoon full of
filling in the middle of each.
Bake 350 for 25 minutes. 36 cupcakes 102 calories each Posted to EAT-L
