Bittersweet chocolate 375 g |
INSTRUCTIONS
Clean and dry the strawberries.
Melt the chocolate gently over hot water or in the microwave. (When
melting chocolate, always remove it from the heat before it is
completely melted. Stir to complete the melting. That way there is
less chance of burning it.)
Dip the strawberries halfway in the chocolate and set them on a waxed
paper lined cookie sheet. Allow them to set in the refrigerator for
about
30 minutes.

NOTES : These are very easy to prepare, but there are several tricks
to make it easier. Make sure the berries are dry when they are dipped
into the chocolate. Some berries do not even need washing - wiping
with a damp cloth is enough. If they are sandy and need washing, be
sure to dry them thoroughly as only a little water could cause the
chocolate to seize. If the strawberry greens are nice, leave them on
and use them as a handle for dipping. If not, hull the berries and
dip the fatter end, grasping the point when dipping. For a
spectacular effect, sprinkle them with edible gold dust when set.
This recipe, from Cooking With Bonnie Stern, makes 15 large coated
strawberries.
