Chocolate Hazelnut Mousse

INGREDIENTS

250 g Dark chocolate
5 lg Eggs whites and yolks separated
1 ts Orange rind; (grated) and extra
; for garnish
2 tb Roasted hazelnuts or pecan nuts; (lightly crushed)
1 tb Caster sugar
1 pn Cream of tartar

INSTRUCTIONS

Melt the chocolate in a bowl over a saucepan of hot water. Once
melted, remove and allow to cool a little.
Add egg yolks, one at a time, and mix in. Add in orange rind.
Beat egg whites, caster sugar and cream of tartar until it forms soft
peaks and fold into the chocolate mixture. Add roasted pecan or
hazelnuts.
Pour the mixture into individual bowls and refrigerate. Serve with
sour cream, mint and grated orange rind.
