1/3 c Non-fat Sweetened Condensed Milk
1/4 c Unsweetened Cocoa Powder
2 tb Cornstarch
1/8 ts Salt
2 c Skim Milk
1 oz Bittersweet Chocolate; chopped
2 ts Vanilla Extract

INSTRUCTIONS

If your New Year's resolutions included an effort to eat better in
1999, we hope you've been enjoying the month of January at
Recipe-a-Day. The Cook & Kitchen Staff are finishing up 31 days of
Recipe-a-Day~Light, as recipes from members begin tomorrow.
Today, we're going to learn to snack a little better by making smart
substitutions to reduce calories and extra fat. You'll find this
smooth and creamy pudding makes a great dessert or snack, and it
contains only about 205 calories with 6 grams of fat per serving.
(Remember, the old-fashioned recipe contained about 375 calories per
serving with 20 grams of fat!)
In a heavy saucepan over medium-low heat, whisk together egg,
condensed milk, cocoa, cornstarch, and salt until smooth. Slowly add
the milk and bring the mixture to a boil, making sure to whisk
constantly until the mixture has thickened, about 10 minutes.
Remove the mixture from the heat source and add the chocolate and
vanilla extract. Whisk the pudding until the chocolate has melted.
Transfer to a bowl and place plastic wrap directly on top of the
pudding. Refrigerate until ready to serve.
Spoon out individual portions and let stand for about 5 minutes prior
to serving; near-room temperature enhances the chocolate flavor.
