A quick chocoalte sauce transforms commercial ice cream, a cake that is
past its prime, or some slightly under-ripe pears. This sauce uses only
simple ingredients but is surpringly good hot or cold. It thickens as it
cools. Better than that stuff you buy in a giant toothpaste tube!
Stir sugar and water over a LOW heat until the sugar has COMPLETELY
dissolved, then bring to the boil and boil for one minute. Take pan off
the heat and add the sifted cocoa and cinnamon. Whisk until smooth. Return
to the heat and boil for one minute.
